Chai masala is a blend of ground whole spices, fennel seeds and ginger powder that is used to further enhance the flavor of the chai and makes it more aromatic. The addition of the spices also increases the health benefits of the chai. For instance, the cloves, cinnamon, and ginger are known to have anti-inflammatory properties. The fennel seeds makes you feel cooler on a hot day.
2 tbsp fennel seeds
½ tbsp dried ginger powder
½ inch cinnamon stick
½ small nutmeg
4 cloves
8 black peppercorns
1/8 tsp saffron, crushed
10 Green Cardamom pods
1/8 tsp Salt
1 In a spice grinder, add fennel seeds, dried ginger powder, cinnamon stick, nutmeg, cloves, black peppercorns, saffron, green cardamom pods and salt. Grind to very fine powder.
2 Store the chai masala powder in an airtight container in a cool place. It will remain fresh for about 6 months. I like to store it in my refrigerator.
Use the chai masala to add more flavor to your chai. Just when the chai is done, add the masala powder (about 1/8 tsp per cup of chai) and stir. Wait for about 30 second before you remove the chai from the heat. Serve the hot masala chai immediately.
