MUMBAI MINCED MUTTON CURRY

SERVES 4

This is an extremely popular Mumbai street food. Even though traditionally mutton or minced goat meat is used in the preparation, you can substitute it with minced lamb meat. Spicy and loaded with proteins, this dish is devoured with pav, a soft puffy Indian style bread. In the US, where pav is not readily available, you can use Hawaiian rolls instead.

½ kg minced mutton. You can also use minced lamb meat

4 tablespoons vegetable oil. I use sunflower or peanut oil.

4 green cardamom pods

1 black cardamom pod

3 cloves

1-inch cinnamon stick

1 bay leaf

2 medium onions, finely chopped

1 tsp garlic paste

1 tsp ginger paste

4 green chilies, finely chopped. Deseed them if you want to reduce the spice level

3 medium tomatoes, finely chopped

2¼ tsp red chili powder. Use the mildly spiced variety such as Deghi or Kashmiri chili powder

¾ teaspoon turmeric powder

1 tsp cumin powder

2 tsp coriander powder

2 tsp garam masala powder

1½ tsp salt, adjust to taste

½ cup green peas

3 boiled eggs, 2 of them chopped and 1 of them halved

1 lime, cut into wedges or wheels to garnish

1 tbsp cilantro, finely chopped

1 Heat the 3 tbsp of the oil in a medium sized pan over medium high heat. Add in the green cardamom, black cardamom, cloves, cinnamon, and bay leaf. Stir fry till the aromas are released, about 2 minutes. And the chopped onions and sauté till they are golden brown.

2 Add garlic paste, ginger paste, and green chilies. Stir continuously till the raw smell of the ginger and garlic goes away, about 2 minutes. Add the chopped tomatoes and sauté them, stirring a few times, till they are cooked, and the oil is released, about 6-7 minutes.

3 Add the 2 tsp of red chili powder, ½ tsp of turmeric powder, cumin powder, coriander powder, and garam masala powder, and stir continuously for about 1 minute. Add the minced meat, mix well, and cook for 5–6 minutes. Add salt according to you taste.

4 Add about 3/4 cup water and bring to a boil. Reduce heat to low and let the minced meat cook for another 25 minutes. 15 minutes into the cooking add the green peas. Add more water if need to prevent the meat from getting completely dry.

5 Remove from heat. Add chopped boiled eggs and mix gently.

6 Heat 1 tbsp of oil in a pan. When the oil is hot sprinkle ¼ tsp of turmeric, ¼ tsp of the chili powder and ¼ tsp of salt in the oil and add the two halves of the egg and sauté for a minute, making sure the yolk does not come out of the egg, but the egg is coated with the spiced oil. Remove from heat and set aside.

Garnish with lemon wheels, chopped cilantro and the halved eggs. Serve with Indian pav or Hawaiian rolls.
